Pumpkin Chili


I made this for dinner again last night...it has become one of my favorites.  A friend of mine posted an article on Facebook about the health benefits of pumpkin just this morning and I commented on how I had just made this.  And then I was asked about the recipe I use....so here you Tricia:-)

You can get everything you need to whip this together from your next Trader Joe's shopping trip.

Ingredients:
 - 1 1/2lbs. ground turkey
 - 1 diced onion
 - 1 diced red bell pepper
 - 1 14oz can of pumpkin 
 - 1 jar of Trader Joe's Chipotle Salsa
 - 1 box of Trader Joe's Tomato & Roasted Red Pepper Soup (I use the low sodium)
 - 2 tsp pumpkin pie spice
 - 1 tsp pepper
 - 1 tsp cumin

Directions:
Cook the ground turkey, diced onion and diced bell pepper in a large pot until the meat is no longer pink. Drain the meat mixture and add the remaining ingredients, bring to a boil and simmer for one hour.  

I also use the crockpot with this recipe... After I brown the turkey meat, I just throw all the ingredients into the crockpot and cook on low for a few hours or however long it takes me to get home from my crazy day.
